Memorial Day race against the clock

Despite less than ideal weather, Brad & I broke out the grill this evening... and barely finished dinner outside before it started raining!

Tofurkey beer brats, homemade vegan potato salad (adapted from Colleen Patrick-Goudreau's The Vegan Table), and baked beans (usually Amy's brand of canned beans, but got the on-sale Hain kind this year) has become our summer holiday outdoor dining tradition. Last 4th of July we ate this on our balcony while watching the fireworks at Pilot Butte, and two years before that it was Eagle Crest.

As you can see, we had the fire pit going tonight - to make it feel like it wasn't 55 degrees and threatening rain. Although these plates aren't the most photo-worthy, they do put a stop to the maddening you-got-baked-beans-in-my-potato-salad/you-got-potato-salad-in-my-beans mishap that Brad and I had a couple of years ago.

OMG! A tempeh scramble!



This was one of the first things that I took with our new Canon D-SLR camera. Gardein buffalo chik'n with tomatoes, pinto beans, on a bed of whole wheat couscous. Absolutely delicious!

Portland!

went to Portland today - very yummy eats! HUGE burrito at Blossoming Lotus, then on to Food Fight for groceries and Sweetpea for dessert and coffee. no daiya cheese to be had but we snagged the teese for pizza tonight!

Fresh kale!




I just went to Fred Meyer and got some of the most vibrant and fresh looking kale I've ever seen. 2 bucks! I'm going to put this bad boy in a green smoothie later tonight and rock out one of my famous smoothies!

Foccacia Bread with Marinara Sauce!



One extremely hot Thursday afternoon, Elaine and I decided to bust one of our favorite vegan cookbooks, The Joy of Vegan Baking. We threw some tomato/spice ingredients into the Blendtec and made the best tasting marinara sauce ever. We then followed some simple instructions with making some foccacia bread and wallah!

It was uhhhhhhh-mazing!

Smoky Refried Bean Soup

Brad and I are currently on a health kick right now, trying to avoid sweets, beer, and all of the other enjoyable things we eat and drink. At least we have this tasty soup to get us through!

Farmer's market Friday

In the Williams family we have our routine pretty much set.

Friday =
Go to Target for random browsing and buying.
Go to Farmer's Market for produce.
Go to Nature's/Whole Foods for week's groceries.

This year, the market doesn't seem to be as bountiful as it was last year, and its the only thing that makes me wish I lived in Portland sometimes.

Oh well... on to the haul for this week:



Let's start with the berries, shall we? Clockwise from the top: local strawberries, loganberries (!!), Rainier cherries, blueberries, raspberries, and blackberries. Add in some zucchini, green beans and cauliflower, and you're set.

The zucchini and green beans are destined for Minestrone soup later in the week, I'm sure the cauliflower will be snacked on throughout the week... and I'm confident the berries will end up in the Blendtec for one of Brad's famous smoothies!
